Ilish is one kind of fish which is very popular among the people of South Asia. It's popularity among Bangladeshi, Odias people and the people of India who live in West Bengal ( Kolkata ) is most. It's a very fragrant fish. This fish is used for preparing many delicious dishes. The main place from where this fish is produced and contributed all over the world is Bangladesh. The main dish which is mostly popular among the people is the Bengali fish curry which is prepared with mustard oil, mustard seed and green chili. This dish is called as SORSE ILISH. This dish is very popular among the Bangladeshi people and India also mostly in West Bengal, Odisha, Assam, Southern Gujrat, Mizoram and Andhra Pradesh.
SORSE ILISH
Sorse Ilish is the most popular dish among the Bengali people, made with a fish called as Ilish. Sorse is the Bengali name of the mustard seed. This fish curry is totally made with mustard seed and mustard oil, that's why it's named as SORSE ILISH, means fish curry with mustard seed. This dish is very easy to make but very tasty to eat.
INGREDIENTS
- Ilish Fish ( 2 pieces )
- Mustard Seed
- Mustard oil
- Black Cumin Seed ( 1 tsp. )
- Salt
- Turmeric Powder ( 1/2 tsp. )
- Green Chili
PROCEDURE
- At first, you have to prepare the fish. Remove all the tell and the scales and clean it properly. after that cut in the proper fillet. After cutting the fish into the fillet, don't wash the fish because that will remove all the flavor of the fish. One more important thing is that when you buy the fish make sure that the fish had no egg.

- After cleaning the fish you have to marinate the fish with turmeric and salt for 1/2hrs in the refrigerator.

- Thake 50gm mustard seed and make a very fine past. After making the past you just mixed the water with that and just drain it out from a clean cloth. It's like removing the coconut milk from the coconut.
- Now take a boul, give one glass of water, 1/2 tsp. of turmeric, 5-7tsp. of mustard oil, 1/2tsp of cumin seed and add all the extracted juices of mustard seed.
- Give a stare and put it onto the oven.
- Give 2 or 3 green chilies as your test.
- After when it starts to boil give the fish into the curry mixture.
- After 7 to 10 mints. when the fish is been cooked. Give 2 to 3tsp of mustard oil and then remove it from the oven.
- Now, your Sorse Ilish is ready to eat. served it with the hot steamed rice.
