Chingri Macher Dopiaza Recipe

Chingri Macher Dopiaza:


         Chingri Macher Dopiaza is a very popular dish among the Bengali (India) peoples. This is basically a shrimp curry with lots of spices. 'Chingri' is the Bengali word of shrimp and 'Dopiaza' means the onions which uses two times in this dish. so this dish basically a shrimp dish with onion and spices.



          This is is very popular among the Bengali houses. This dish named as 'Dopiaza' because in this dish onion used in two way, chopped and puree. This dish goes very well with hot steamed rice or pulao. A wonderful dish but very easy to make. I'm very much sure that if you make this dish once, you will love this.


Ingredients





Shrimp

  • Shrimp (150gm)
  • onions (3 medium sizes)
  • Garlic (4 to 5 cloves)
  • Ginger paste (2 tablespoons)
  • Green chili (2 to 3)
  • Coriander leaves
  • Tomatoes  


Spices:

  • Cinnamon
  • Dry Chili
  • Dry Bay Leaves
  • Cardamom
  • Cumin Seeds Powder
  • Turmeric
  • Red Chili Powder
  • Tomato Ketchup
  • Garam Masala
  • Salt
  • Master Oil

Procedure:

  • First, you have to clean the shrimps. Now, how clean a shrimp? It's a big question for most of us but I tell you, my friends, it's very easy to do. First, you have to remove the hade very gently by twisting the head. After removing the head, you have to take a knife and then you have to cut on the back side from front to tell. After the scales can be removed very easily. Now you have to take off the intestines of shrimp from that cut region. Now it's absolutely clean for cooking.
  • After cleaning up the shrimp you have to marinate the shrimps with salt and turmeric for 1hr in the freezer. Take the shrimps in a dish and give a half tablespoon of salt and turmeric.



Marinated Shrimp with Salt and Turmeric

  • Now you prepare the spices in the meantime.
  • You have to make a paste of cumin seed powder(1tsp), turmeric(1tsp), red chili powder(1/2tsp) with a little bit of water.
  • Now take a knife and chopped finely slice of two onion, garlic, tomato and green chili.
  • With remaining one onion make a paste of onion


Chopped and Puree of Onions

  • After one hour of marination, take out the shrimp from the freezer.
  • Now take six to seven tablespoons of master oil into a hot heated pan on an oven.
  • Fried the shrimp for ten to fifteen sec. both side.
  • After you have to remove all the shrimps from the pan. after in the same pan give 2tps of master oil.
  • Give a bay leaves, a dry chili, a cinnamon, 2 or 3 cardamom and fry for 10secs.
  • Then give the chopped onions into the oil and fry for 5mins in the medium flame. After 5mints give the chopped garlic, onion paste, ginger paste, tomato and chopped green chilies and cook in the slow flame till it's color gets brown.
  • Now you have to add to masala pastes and tomato ketchup and then fry the spices for 3mins in the slow flame.





Fried Masala

  • Now add one cup(small) of water and add the fried shrimp and give the lid closed. 
  • Cooked till the water gates vapourised.
  • At last, give 1/4tsp of garam masala and chopped coriander then mix it properly.
  • Your Chingri Macher Dopiaza is now ready to serve.
